Anne Catherine Bley got the inspiration for her lovely soup bar in London. "I wanted to create a place where you could eat light and eat your vegetables," she says. Every day, she prepares seven different soups which you can either eat in her elegant little restaurant or take with you. A vegetable gardener comes every day with his fresh French veggies. Anne-Catherine's recipes come from all over the world. They come in all shapes and color: hot and cold, Indian soup with golden lentils, pumpkin velouté with bacon, white parmesan soup, carrot soup with coconut milk and spices...you can have a soup, a plate of charcuteries or cheese, a glass of wine or a coffee.
